During the pandemic, customers gave the foodservice industry a pass on sustainability in an effort to navigate the unanticipated hurdles that the industry was facing. However, a shift back to sustainability is now becoming apparent again in the foodservice industry and customers are demanding more from operators and manufacturers. In 2023, we will see several notable trends that prioritize reducing food waste and saving water. At Idahoan® Foodservice, we strive to be stewards of the land that allows us to thrive. We’re focused on maintaining efficient processes to offer a premium product with a minimal impact on the environment.

One significant trend is the push to reduce food waste. According to the Food Industry Executive, in 2023, there will be a heightened emphasis on finding innovative solutions to combat food waste in the foodservice industry. This includes measures such as implementing better inventory management systems, utilizing technology to track and reduce waste, and donating surplus food to local food banks or charities. Our Idahoan speed-scratch potatoes are an easy solution to food waste issues. Our products are shelf-stable for up to 12 months; this long shelf life reduces the possibility of food not being used in time and ending up in the trash. Additionally, we make an effort to eliminate food waste by diverting potato scraps; each year, Idahoan supplements the nutrition of over 35,000 cows with leftover potato scraps.

Another prominent sustainability trend in 2023 is the emphasis on saving water. As water scarcity becomes a growing concern globally, the foodservice industry is taking steps to minimize water usage in their operations. This includes installing water-efficient equipment, such as dishwashers and faucets, and implementing water-saving practices in food preparation and cleaning. At Idahoan, we’ve embedded efficiency into our processing systems. We re-use water through a re-directed, upstream process to create water-recycling loops. Through these efforts, Idahoan’s freshwater consumption remains at neutral levels.
