Combine boiling water, salt, butter* and cold milk according to chart below, in suitable size steam table pan or mixing bowl.

Pour in potatoes per chart below. Stir by hand or use paddle mixer set at LOW speed – about 10 to 15 seconds. For best results, do not overmix – DO NOT WHIP. Serve.
Note: For a creamier mashed potato, stir in additional hot water or milk. For a firmer mashed potato, stir in additional potatoes. Less salt can be added if desired. *Margarine may be substituted for butter.
