Combine salt, butter, boiling water and cold milk in suitable size steam-table insert, serving pan or mixing bowl according to the chart below.

Pour in potatoes per chart below. Stir by hand or use paddle mixer set at LOW speed – about 10 to 15 seconds. For best results, do not overmix – DO NOT WHIP. Serve.
Note: For a drier mashed potato, add more potatoes or decrease boiling water ½ qt for each 2 ½ lbs potatoes.
