Ingredients
  • 1 bag (26 ounces) Honest Earth® Creamy Mashed Potatoes with Butter & Sea Salt
  • 3 cups coconut flakes
  • ¾ cup water
  • 3 tablespoons corn starch
  • 1½ cups water
  • 2 teaspoons Pandan essence (vanilla can be substituted)
  • 1 teaspoon green food coloring
  • 2 cups coconut sugar (add this to the boiling water for preparing the balls)
Instructions
  1. In a small pot, add ¾ cup water along with the coconut flakes and salt and bring to a simmer. Simmer 2 minutes and set aside.
  2. Prepare the potato balls by combining the dry Honest Earth® Creamy Mashed Potatoes with the cornstarch, Pandan, 1.5 cups water, and food coloring. Mix well to combine into a dough. Using a #60 scoop, scoop the dough and roll into balls.
  3. Bring a pot of water to a boil, add the dough balls, and simmer until they float. Time for 1 minute after the balls float. Remove from the water, coat in the coconut sugar, and serve.
