Loaded Baked Potato Soup

Our Loaded Baked Potato Soup is a comfort classic made healthier with Idahoan® SMARTMASH® Reduced Sodium Loaded Baked® Mashed Potatoes with Vit C. This rich and creamy soup is made with low sodium chicken stock and is loaded with crispy bacon bits, low-fat cheddar cheese, and low-fat sour cream. We’ve added shredded chicken for extra protein and topped it off with scallions and crushed whole wheat crackers for a satisfying crunch – it’s a delicious soup that’s sure to warm the hearts and stomachs of students everywhere.

Ingredients
  • 1 bag (31 ounces) Idahoan® SMARTMASH® Reduced Sodium Loaded Baked® Mashed Potatoes with Vit C
  • 2 gallons low-sodium chicken stock
  • 1½ pounds bacon bits
  • 1½ pounds low-fat cheddar cheese
  • ½ pound low-fat sour cream
  • 1 pound scallions (sliced thinly)
  • 3 pounds shredded chicken (diced chicken can also be used)
  • 40 each whole wheat crackers
Instructions
  1. Bring the chicken stock to a boil and whisk in the package of potatoes until well combined.
  2. Add the remaining ingredients and heat to 165°F. Serve with whole wheat crackers.
