Loaded Baked Potato Soup
- 1 bag (31 ounces) Idahoan® SMARTMASH® Reduced Sodium Loaded Baked® Mashed Potatoes with Vit C
- 2 gallons low-sodium chicken stock
- 1½ pounds bacon bits
- 1½ pounds low-fat cheddar cheese
- ½ pound low-fat sour cream
- 1 pound scallions (sliced thinly)
- 3 pounds shredded chicken (diced chicken can also be used)
- 40 each whole wheat crackers
- Bring the chicken stock to a boil and whisk in the package of potatoes until well combined.
- Add the remaining ingredients and heat to 165°F. Serve with whole wheat crackers.
