Ingredients
  • 1 carton (2.125 pounds) Idahoan® SHREDS Fresh Cut Hash Browns with Seasoning
  • 3½ quarts boiling vegetable stock (Refresh using hot water process, but replace water with vegetable stock.)
  • 2 quarts liquid eggs
  • 3 cups half and half
  • ¼ cup olive oil
  • 4 each zucchini - medium sized (Large dices)
  • 4 cups fresh mushrooms (Cut into quarters)
  • 2 each white onion (Chopped)
  • 2 Tablespoons minced garlic
  • ½ cup fresh basil
Instructions
  1. Open the carton of Idahoan® SHREDS Fresh Cut Hash Browns with Seasoning, add the hot vegetable stock to the fill line of the carton, and close. If rehydrating the potatoes in a bowl, add the 3.5 quarts of stock, cover, and allow the potatoes to rehydrate for 10 minutes.
  2. Mix together the eggs, salt, pepper, and cream and place into the refrigerator and hold for next steps.
  3. Place the oil into a sauté pan and heat. Add the vegetables and sauce until the onions are lightly carmelized and the mushrooms have released most of their liquid. Drian any excess liquid and add the garlic sauce for 2 minutes. Toss in the basil and remove from the heat.
  4. Fold the vegetables into the refreshed shreds and mix well. Once mixed, fold in the cream and egg mixture until well combined.
  5. In four 2" half pans that have been sprayed with pan release, place the mixture equally. Bake at 375 degrees F until golden brown and the mixter has set - approximately 30 minutes.
