Cedar Plank Salmon with Creamy Mashed Potatoes

This simple-yet-classic dish includes our Idahoan® CREAMY Classic Mashed Potatoes topped with a buttery fillet of cedar plank salmon and fresh microgreens. Using Old Bay Seasoning, this dish is a melt-in-your-mouth favorite.

Ingredients
  • 1 bag (26 ounces) Idahoan® CREAMY Classic Mashed Potatoes (prepared according to hot water instructions)
  • 1 gallon hot water (water should be between 180°F to 190°F)
  • 10 pounds salmon fillet (cut into 4 ounce portions)
  • 3 ounces Old Bay seasoning (lightly season the salmon fillets)
  • 3¾ cups fresh microgreens (for garnish)
Instructions
  1. Measure 1 gallon of hot, not boiling, water into a large bowl.*
  2. Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
  3. Place the salmon fillets onto cedar planks and season with Old Bay Seasoning. Bake in a preheated oven at 375°F for 10-15 minutes or until an internal temperature of 140°F is reached.
  4. Plate by placing 4 ounces of the Idahoan® CREAMY Classic Mashed Potatoes onto a serving plate and top with the baked salmon fillet.
  5. Garnish with fresh micro greens.
