Shredded Potato California Sushi Roll

Substituting Idahoan®Hearty Cut Hash Browns as the starch – instead of traditional rice – fill with traditional sushi ingredients like avocado, cucumber, and carrot, and roll into nori for an exciting new way to experience an otherwise typical Asian meal.

Ingredients
  • 1 carton (2.25 pounds) Idahoan® SHREDS Hearty Cut Hash Browns with Sea Salt & Cracked Black Pepper (Refreshed according to directions on package)
  • 3 quarts water
  • ½ quart seasoned rice vinegar (Add to the water for hydration to equal amount required)
  • 6½ pounds crab sticks (Thawed and held for assembly)
  • 5 pounds avocado (Sliced and held for assembly)
  • 2 pounds cucumber (Julienned and held for assembly)
  • 2 pounds carrot (Julienned and held for assembly)
  • 18 sheets nori
Instructions
  1. Refresh the Idahoan® SHREDS Hearty Cut Hash Browns with water and vinegar in the refrigerator according to the overnight refresh instructions.
  2. To assemble: on a bamboo sushi mat, lay out 1 piece of nori. Top with 4-ounces of potato, evenly spreading across the nori.
  3. Starting on one side, lay out the avocado, cucumber, and carrot stacked tightly together. Then add the crab stick on top of the vegetables.
  4. Using the bamboo mat, roll tightly, working away from you until fully rolled. Using a sharp knife, cut the rolls and serve. Accompany the sushi with your favorite condiments.
