Pesto Chicken Mashed Potatoes and Broiled Grape Tomatoes

Ingredients
  • 26 ounces 1 bag (26 ounces) Honest Earth® Creamy Mashed Potatoes (prepared according to hot water instructions)
  • 1 gallon water (water should be between 180°F to 190°F)
  • 3½ pounds chicken breast (grill chicken to 165°F, hold for assembly)
  • 1¾ pounds grape tomatoes (cut in half, seasoned with salt and pepper and olive oil, broiled and held for assembly)
  • 1 pound pesto (held for assembly)
  • 1 pound grated Parmesan cheese (held for assembly)
Instructions
  1. Measure 1 gallon hot, not boiling, water into a large bowl.*
  2. Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
  3. To assemble, place 10 ounces of potato into a bowl. Place a 4-ounce grilled chicken breast on top, followed by 2 ounces of broiled tomato. Drizzle with 1 ounce of pesto and finish with 1 ounce of Parmesan cheese.
