Our K-12 Morning Edition Breakfast Burrito is a morning delight. This savory creation starts with Honest Earth® Hash Brown Shredded Potatoes seasoned to perfection, baked to a crispy finish. All these delightful components are wrapped in a warm whole grain flour tortilla, creating a perfectly balanced breakfast that delivers a satisfying blend of flavors and nourishment.

Ingredients
  • 1 carton (1.25 pounds) Honest Earth® Hash Brown Shredded Potatoes with a Hint of Sea Salt & Pepper
  • 1.5 quarts hot water, 190°F maximum temperature
  • 4 tbsp low-sodium taco seasoning
  • 5 pounds liquid whole eggs
  • 11 ounces canned diced green chilies
  • 12 ounces reduced-fat shredded cheddar cheese
  • 50 each whole grain flour tortilla, wrap the tortillas in foil and place in a 300°F oven to warm to make them flexible
Instructions
  1. Prepare the Honest Earth® Hash Browns by adding the taco seasoning to the hot water prior to adding to the carton. Allow the shreds to hydrate per package instructions. Once hydrated, allow any excess liquid to drain. Spray a full sheet pan and spread the potatoes evenly. Bake at 400°F for 15 minutes, stirring the potatoes to allow even cooking.
  2. Prepare the eggs by scrambling on a flat top. Alternatively, place the eggs into a sprayed 2-inch hotel pan and baking at 350°F, stirring every 15 minutes until the internal temp reaches 155°F. Hold on steamtable for assembly. Prior to assembly, whisk the egg and add the chilies, mixing completely.
  3. Lay out the warmed tortillas on a clean and sanitized work surface. Using a #16 scoop, place ¼ cup of the egg mixture in the center of each tortilla, topping with 2 ounces of the seasoned hashbrowns and 1 tblsp of the cheddar cheese. Fold the bottom edge of the tortilla up and over the filling and pull back slightly to spread out the filling. Fold the tortilla on each side, then roll the burrito over the top edge of the tortilla. Wrap each burrito in deli paper and hold in hot in a warmer until ready to serve. Hold HOT at 141°F or warmer.
  4. NOTE: Serving Size= 1 Burrito. Each serving provides 1.5-ounce equivalent grains, 1.75-ounce equivalent meat/meat alternatives, and ⅛ cup starchy vegetables.
