Honest Earth® Cinnamon Rolls

These cinnamon rolls use Honest Earth® Creamy Mashed Potatoes for the dough to create a unique spin on this classic breakfast treat. Filled with a sweet and spicy cinnamon and brown sugar filling, these are the perfect pastries for special occasions or lazy weekend mornings.

Ingredients
  • 1¼ cups milk
  • ¼ cup warm water
  • ¾ cup granulated sugar
  • 2 tablespoons yeast
  • ⅓ cup vegetable oil
  • 2 teaspoons salt
  • 3 each eggs
  • ¾ cup Honest Earth® Creamy Mashed Potatoes with Butter & Sea Salt
  • 3 cups flour
  • 1 cup unsalted butter
  • 2½ tablespoons cinnamon
  • 2 cups dark brown sugar
  • 2 cups prepared cream cheese icing
Instructions
  1. Place the milk into a pan and scald, set aside and allow to cool. In the meantime, place the water, half of the sugar, and the yeast in a bowl. Set aside and allow the yeast to bloom for 5 minutes (it will become frothy).
  2. In the bowl of a stand mixer with a hook attachment, place the oil, salt, remaining sugar, and eggs. Blend until smooth, and then add the yeast mixture to the mixer on low to incorporate. Add the dry Honest Earth® Creamy Mashed Potatoes and mix until smooth.
  3. Once the potatoes have been incorporated, begin adding the flour, starting with 3 cups and adding more if needed. The mixture should be slightly sticky, but not wet. Once the mixture is tacky, remove and knead, adding flour if too sticky. The mixture should be soft and pliable.
  4. Place into a greased bowl and allow to rise until doubled in size. Once doubled, punch down the dough. Roll out to a large rectangle. Mix the cinnamon and dark brown sugar together. Spread an even layer of the softened butter followed by a generous layer of the cinnamon sugar mix. Roll and cut to desired size. Place in a greased pan and allow to rise until doubled in size once again. Bake in a preheated 375°F oven for 15-20 minutes until golden. Once out of the oven, allow to rest for 5 minutes before spreading with icing. Serve.
