Ingredients
  • 1 bag (28 ounces) Idahoan® RUSTIC Russets Mashed Potatoes (prepared according to hot water instructions)
  • 1 gallon hot water (water should be between 180°F to 190°F)
  • 10 pounds herbed pork chops (prepared and held for assembly)
  • 7½ pounds seasonal vegetables (roasted and held for assembly)
Instructions
  1. Measure 1 gallon hot water into a 6" x ½ size steam table pan.
  2. Add entire pouch of potatoes all at once, using spoon or wire whip to distribute evenly and wet all potatoes. Let stand one minute, then fluff with spoon or wire whip. Place on steam table for 10 minutes. Stir well.
  3. To assemble, place the potatoes onto a plate with 4-ounces of the prepared pork chop and 3-ounces of the prepared vegetables.
