Ingredients
  • 1 bag (26 ounces) Honest Earth® Rustic Mashed Potatoes with Butter & Sea Salt
  • 2½ gallons hot water (add two gallons and adjust if needed by adding more)
  • 5 ounces chicken base (adjust stock based upon the brand instructions)
  • 108 ounces diced hatch chilis (#10 can) (do not drain)
  • 10 pounds roasted corn (thawed from frozen)
  • 1 ounce chili powder
  • 8 ounces queso fresco (crumbled)
Instructions
  1. Place the water, chicken base, and hatch chilis into a stock pot on the stove. Bring to a boil.
  2. Reduce the heat on the stock and stir in the Honest Earth® Rustic Mashed Potatoes. Add the hatch chilis and chili powder. To adjust the consistency, add more water. Add the corn and simmer.
  3. Finish by garnishing with queso fresco.
