Ingredients
  • 1 pouch (28 ounces) Idahoan® RUSTIC Russets Mashed Potatoes
  • 1 gallon hot chicken stock (Use chicken stock in place of traditional water refresh)
  • 6 cups BBQ sauce (Use your favorite sauce)
  • 12 pounds Hormel® Austin Blues® BBQ Pulled Chicken
  • 4 pounds shredded cheddar cheese
  • ½ pound sliced scallions
Instructions
  1. Measure 1 gallon of hot, not boiling, chicken stock into a large bowl.
  2. Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
  3. Heat the chicken according to Hormel's specifications, add to heated sauce and hold for service.
  4. Place the Idahoan® RUSTIC Russets Mashed Potatoes into the bowl top with 4 oz. of the Hormel® Austin Blues® BBQ Pulled Chicken and finish with 2 oz. of shredded cheddar cheese and a sprinkling of scallions.
