Seared Halibut with Wasabi Mashed Potatoes

Ingredients
  • 1 bag (26 ounces) Honest Earth® Rustic Mashed Potatoes with Butter & Sea Salt
  • 1 gallon hot water
  • 1 ounce wasabi powder (Adjust amount for desired flavor)
  • 10 pounds 4oz halibut fillets (Sear and cook to 141°F)
  • ½ pound microgreens (For garnish)
Instructions
  1. In a large bowl, place the hot water and wasabi powder and mix until combined. Once combined, add the Honest Earth® Rustic Mashed Potatoes to the water mixture using a whisk to ensure all potatoes are fully refreshed. Hold hot for assembly.
  2. To assemble, place 4-ounces of the wasabi mashed potatoes onto the center of the plate, place the seared halibut on top of the potatoes, and top with micro greens for garnish. Serve with vegetables of the day.
