This harvest season spin on the classic mashed potato side takes our Honest Earth® Rustic Mashed Potatoes to new heights. Zingy garlic, fresh sage, and sweet onions combine to create an aromatic and flavorful experience that perfectly compliments fish, poultry, meat, or flexitarian alternatives.

1 bag (26 ounces) Honest Earth® Rustic Mashed Potatoes (prepared according to hot water instructions)
1 gallon hot water (water should be between 180°F to 190°F)
2 ounces olive oil
1 ounce chopped garlic
6 ounces fresh sage leaves (rough cut)
2 pounds sweet yellow onions (medium diced)
Instructions
Measure 1 gallon hot, not boiling, water into a large bowl.*
Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 10 minutes until the potatoes are fully hydrated.
While potatoes are hydrating, heat the olive oil in a skillet. Add the garlic and watch so as not to scorch. Add the sage leaves to scent the oil and finish by sautéing the onions until tender.
