1 bag (26 ounces) Idahoan® SMARTMASH® Classic Mashed Potatoes with Vit C (prepared according to hot water instructions)
1 gallon hot water (water should be between 180°F to 190°F)
2 tablespoons olive oil
8 ounces yellow onion (chopped)
1 pound lean ground beef
2 teaspoons parsley flakes
1 teaspoon dried rosemary leaves
1 teaspoon dried thyme leaves
½ teaspoon sea salt
½ teaspoon ground black pepper
1 tablespoon Worchestershire sauce
2 cloves garlic (minced)
2 tablespoons all-purpose flour
2 tablespoons tomato paste
1 cup beef broth
1 cup frozen peas and carrots
½ cup frozen corn kernels (optional)
Instructions
Preheat the oven to 400°F.
TOPPING:
Measure 1 gallon of hot, not boiling, water into a large bowl.*
Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
FILLING:
Add the olive oil to a large skillet and place it over medium-high heat for 2 minutes. Add the onions and cook 5 minutes, stirring occasionally. Add the ground beef, breaking up the meat. Finally, add the seasonings and cook until the meat is browned.
Add the Worcestershire sauce and garlic. Stir to combine and cook for one minute.
Add the flour and tomato paste and stir until well incorporated into the meat.
Add the beef broth mix and simmer for five minutes stirring occasionally.
ASSEMBLY:
Place the meat mixture into a 2" half pan that has been sprayed with pan release. Pipe in Idahoan® SMARTMASH® Classic Mashed Potatoes with Vit C in a unique pattern or spread evenly on top of the meat mixture.
Place into the preheated oven and bake for 25-30 minutes until golden brown.
