Ingredients
  • 1 pouch (32.85 ounces) Idahoan® RUSTIC Buttery Golden Selects® Mashed Potatoes
  • 1 gallon hot chicken stock
  • 3 quarts SupHerb Farms® Jamaican Jerk Seasoning
  • 35 pounds bone-in skin-on chicken breasts
  • 32 each lime wedges (Garnish)
  • 2 bundles cilantro (Washed and sprigs for garnish)
Instructions
  1. Measure 1 gallon of hot, not boiling, water into a large bowl.
  2. Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
  3. Generously rub the chicken with the SupHerb Farms® Jamaican Jerk Seasoning and allow to rest for at least one hour. Bake at 350 F until the chicken reaches proper internal temperature. Hold for service.
