Ingredients
  • 1 gallon Idahoan® SLICES Unseasoned Potatoes
  • 2 ½ gallons boiling water
  • 1 tablespoon salt
  • 2 onions, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 ounces clarified butter or ghee
  • Salt and pepper to taste
Instructions
  1. Place the sliced potatoes into salted boiling water and simmer for approximately 20 minutes, or until al dente. Drain and hold for preparation.
  2. On a hot griddle, melt the clarified butter. Add the onions and peppers and sauté lightly, then add the potatoes. Continue cooking until the onions are golden and the potatoes begin to take on color. Avoid moving the potatoes too much so they don’t break apart.
  3. Season with salt and pepper.
  4. Hold hot for service.
