Ingredients
  • 1 pouch (29.5 oz) Idahoan® Honest Earth® CREAMY Buttery Homestyle® Mashed Potatoes with extra Butter & Milk
  • 3.5 qt hot water
  • ½ qt prepared tzatziki sauce
  • 4 tbsp. olive oil
  • 1 pound red onions
  • 1 pound yellow onions
  • 7 pounds gyro meat
  • 1.5 pounds roma tomatoes
  • 1 pound kalamata olives
  • 2 pounds feta cheese
Instructions
  1. In a large mixing bowl add the hot water and the tzatziki mix to combine. Slowly whisk in the potatoes until fully mixed and allow to refresh for 2 minutes then fluff. Hold hot for assembly.
  2. In a skillet heat the oil and sauté both onions together until caramelized. Hold hot for assembly.
  3. Prepare the gyro according to manufacturing directions and hold hot for assembly.
  4. To assemble, place 5 ounces of the mashed potatoes into a bowl, top with 3 ounces of the gyro meat, 2 ounces of sauteed onions, and finish by garnishing with the olives and feta cheese.
