This healthy Asian Energy Bowl features Idahoan® Honest Earth® Creamy Classic Mashed Potatoes with a hint of Butter & Sea Salt infused with chili crisp and sesame oil, topped with crunchy veggies and finished with a lemon–tahini drizzle, and a sprinkle of black sesame.

Ingredients
  • 1 pouch (26 oz) Idahoan® Honest Earth® Creamy Classic Mashed Potatoes with a hint of Butter & Sea Salt
  • 1 gallon of hot water
  • 2 oz chili crisp
  • 2 tblsp sesame oil
  • 1 pound of thinly sliced green bell peppers
  • 1 pound of thinly sliced cucumbers
  • 1 pound of shredded carrots
  • 1 pound of pickled red onions
  • 1 pound of thinly sliced radishes
  • 2 pounds of mushrooms
  • 2 pounds of edamame
  • ½ pound of micro greens
  • 1 qt of lemon tahini dressing
  • 2 oz of black sesame (garnish)
Instructions
  1. Place the water, chili crisp, and sesame oil into a large bowl and whisk to combine.
  2. Add the potatoes and whisk to combine. Allow the potatoes to refresh for 5 minutes.
  3. To assemble, place the potatoes into a bowl and arrange the vegetables in the center of the bowl. Garnish with the micro greens and drizzle with two ounces of dressing.
  4. Sprinkle with black sesame to finish.
