Cajun "Gator" Bites

Ingredients
  • 32⅞ ounces Idahoan® SHREDS Tater Tumblers® Original Mix with Spices
  • 2 quarts hot water (water should not be above 130° F)
  • 4 ounces Cajun seasoning
  • 16 ounces cooked chicken (chopped fine)
  • 16 ounces Monterey Jack cheese (shredded (Pepper Jack cheese is also a good option for more kick))
  • 1 quart ketchup
  • 1 quart mayonnaise
Instructions
  1. Measure 2 quarts hot, not boiling, water into a large bowl.* Stir in the hot sauce to ensure that the flavor blends into the entire mixture as the potatoes hydrate.
  2. Add entire pouch of potatoes all at once, using spoon or wire whip to distribute evenly and wet all potatoes. Let stand 10 minutes until the potatoes are fully hydrated.
  3. Once the potatoes are hydrated, add the chicken, Cajun seasoning and shredded Monterey Jack cheese and fold together. Combine the mayo and ketchup to create an old fashioned fry sauce.
  4. Portion using a #60 scoop. Fry at 350° F for 2-3 minutes or until golden brown. Serve 6 pieces per order with 2 ounces of fry sauce in a ramekin.
