Cajun "Gator" Bites
- 32⅞ ounces Idahoan® SHREDS Tater Tumblers® Original Mix with Spices
- 2 quarts hot water (water should not be above 130° F)
- 4 ounces Cajun seasoning
- 16 ounces cooked chicken (chopped fine)
- 16 ounces Monterey Jack cheese (shredded (Pepper Jack cheese is also a good option for more kick))
- 1 quart ketchup
- 1 quart mayonnaise
- Measure 2 quarts hot, not boiling, water into a large bowl.* Stir in the hot sauce to ensure that the flavor blends into the entire mixture as the potatoes hydrate.
- Add entire pouch of potatoes all at once, using spoon or wire whip to distribute evenly and wet all potatoes. Let stand 10 minutes until the potatoes are fully hydrated.
- Once the potatoes are hydrated, add the chicken, Cajun seasoning and shredded Monterey Jack cheese and fold together. Combine the mayo and ketchup to create an old fashioned fry sauce.
- Portion using a #60 scoop. Fry at 350° F for 2-3 minutes or until golden brown. Serve 6 pieces per order with 2 ounces of fry sauce in a ramekin.
