Ingredients
  • 1 pouch (26 ounces) Honest Earth® Creamy Mashed Potatoes with Butter & Sea Salt
  • 3 quarts hot water (Water should be between 190-200 degrees)
  • 1 quart seasoned rice vinegar
  • 1 ounce chili paste
  • 7 pounds Hormel® Fire Braised Chicken Thigh (Diced and heat for service)
  • 7 pounds oickled carrot and diakon matchsticks
  • 3 pounds cherry tomatoes (Cut into quarters)
  • 3 pounds european cucumbers (Sliced)
  • Jalapeño slices and cilantro (For garnish)
Instructions
  1. In a large mixing bowl place the water, vinegar, and chili paste. Mix to combine.
  2. Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
  3. Place Honest Earth Creamy Mashed Potatoes with Butter & Sea Salt into each bowl and top with a Hormel® Fire Braised? Chicken Thigh, pickled vegetebles, tomatoes and cucumber slices. Garnish with sliced jalapeño and cilantro.
