1 carton (1.25 pounds) Honest Earth® Hash Brown Shredded Potatoes
2 quarts water
¼ cup gochujang
1 pound bacon (thick cut)
1 each white onion (medium size)
1 tablespoon garlic (chopped)
2 pounds kimchi (with liquids)
¼ cup chives (used as garnish)
Instructions
Measure the water, add Gochujang, and mix well. Add the water mixture to the carton of Honest Earth® potatoes and refresh according to the directions on pack.
Cut the bacon into ½" x ½" pieces, chop the onion to a medium dice. Place the bacon into a large roundeau and render the fat. Add the onions to the bacon and sauté until the bacon is almost crisp and onions are just carmelizing.
Add the refreshed potatoes to the pan and sauté, adding some color to the potatoes.
Continue to cook and add the kimchi to the pan, ensuring the final temperature is above 170°F.
Serve a 6-ounce portion of the potatoes along with a poached egg and garnish with chives.
