1 bag (32.9 ounces) Idahoan® SHREDS Tater Tumblers® Unseasoned Mix
2 quarts hot water
½ cup Everything Bagel seasoning (added to the hot water for uniform hydration of flavor)
1 pound cream cheese (room temperature. added to the hot water and the seasoning)
1 cup pickled red onion (chopped without brine)
½ cup capers (without brine)
Instructions
In a 2-quart measure, add the cream cheese and the seasoning. Add hot 190°F water to the measurer and whisk until combined. Place the mixture into a bowl.
Fold in the Tater Tumblers® mix, ensuring there are no dry pockets. Add the onion and capers and fold together. Allow to refresh for 15 minutes.
Scoop using a #60 scoop and place into a 375°F deep fryer. Fry until golden brown and serve with your choice of dipping sauce, such as a garlic aioli. Serve 5 per order.
*You can also form the mix into patties, sauté, and top with salmon and a poached egg, finished with Hollandaise.
