1 Bag (26 ounces) Honest Earth® Creamy Mashed Potatoes with Butter & Sea Salt
3½ quarts warm water
½ quart fresh lime juice
1 cup canola oil
9 teaspoons aji amarillo purée (mild or spicy)
3 pounds avocado (diced and used for layering)
Instructions
In a large bowl, place the warm water and lime juice. Add the Aji Amarillo purée and the oil and whisk until blended. Add the Honest Earth® Creamy Mashed Potatoes and mix well. Allow the potatoes to refresh and hold.
Line a full size, 2-inch deep hotel pan with cling film. Spread half of the potato in the bottom of the hotel pan, followed by a layer of the avocado, finish by topping with the remianing potato.
Chill for 2 hours before service. Unwrap and cut into 24 portions. You can also assemble into individual molds and unmold within 15 minutes before serving.
