Asian Beef Salad
- 1 carton (1.25 pounds) Honest Earth® Hash Brown Shredded Potatoes
- 1¾ quarts hot water
- ¼ quart seasoned rice vinegar
- 2 pounds fajita beef strips (pre-cooked)
- 1 pound cucumber (julienned)
- 1 pound carrot (julienned)
- ½ pound scallions (sliced thinly)
- 1 quart toasted sesame dressing
- 1 cup toasted sesame seeds (toast and use for garnish)
- Measure the water and rice vinegar and pour over the Hones Earth® Hash Brown Shredded Potatoes in the carton. Close the carton and allow to refresh overnight in the cooler.
- Remove the refreshed hash browns from the cooler and place them into a large bowl. Combine with the fajita beef, cucumbers, carrots, and scallions. Toss the salad with toasted sesame dressing. The amount of dressing may be adjusted to the desired coating.
- Plate the salad and garnish with a sprinkling of toasted sesame seeds.
