Asian Beef Salad

Ingredients
  • 1 carton (1.25 pounds) Honest Earth® Hash Brown Shredded Potatoes
  • 1¾ quarts hot water
  • ¼ quart seasoned rice vinegar
  • 2 pounds fajita beef strips (pre-cooked)
  • 1 pound cucumber (julienned)
  • 1 pound carrot (julienned)
  • ½ pound scallions (sliced thinly)
  • 1 quart toasted sesame dressing
  • 1 cup toasted sesame seeds (toast and use for garnish)
Instructions
  1. Measure the water and rice vinegar and pour over the Honest Earth® Hash Brown Shredded Potatoes in the carton. Fill carton to fill line with water from hot water dispenser at 180° - 190°F (80°-90°C). Reclose and let stand at room temperature for 10 minutes.
  2. Remove the refreshed hash browns from the cooler and place them into a large bowl. Combine with the fajita beef, cucumbers, carrots, and scallions. Toss the salad with toasted sesame dressing. The amount of dressing may be adjusted to the desired coating.
  3. Plate the salad and garnish with a sprinkling of toasted sesame seeds.
