Beef Vegetable Soup
- 1 carton (1.25 pounds) Honest Earth® Hash Brown Shredded Potatoes
- 2 quarts hot water
- 2 gallons beef stock (For K-12, use low-sodium base)
- 3 pounds stew meat
- 3 pounds frozen five-way blend vegetables (best if thawed)
- Add 2-quarts hot water to the carton of Honest Earth® Hash Brown Shredded Potatoes. Close the carton and place in the cooler for an overnight refresh.
- In a large stock pot, add the beef stock and stew meat. Simmer for 30 minutes or until the beef becomes tender.
- Once the meat is tender, add the vegetables and the carton of refreshed potatoes. Bring to a brisk boil. Reduce and keep hot for service.
