Corned Beef Cakes
- 1 bag (26 ounces) Honest Earth® Creamy Mashed Potatoes with Butter & Sea Salt
- 3½ quarts hot water
- ½ quart Thousand Island dressing
- 1 pound potato starch
- 8 ounces sauerkraut (drained)
- 1½ pounds corned beef (shredded)
- ¾ pound Swiss cheese (shredded)
- ½ quart vegetable oil
- Place the water and dressing into a bowl. While whisking, add the Honest Earth® Creamy Mashed Potatoes and allow to refresh for one minute.
- Once refreshed, whisk in the potato starch until smooth. Finish by adding the sauerkraut, corned beef, and swiss cheese.
- Using a 2-ounce scoop, form the potato cakes.* To cook, head 1 Tblsp of vegetable oil on a 375°F griddle, place the potato cakes on the griddle and cook until golden brown. Alternatively, deep fry at 350°F until golden, if preferred.
- *If serving as a side dish, serve one six-ounce patty either grilled or fried. If serving as an appetizer, scoop with #60 scoop and deep fry.
