1 carton (1.25 pounds) Honest Earth® Hash Brown Shredded Potatoes
2 quarts hot water
½ cup yellow mustard
¼ cup red wine vinegar
8 ounces hard boiled eggs (chopped)
8 ounces celery (chopped)
8 ounces scallions (chopped)
4 ounces sweet pickle relish
2 pounds mayonnaise
salt and pepper (to taste)
Instructions
Combine the hot water, yellow mustard, and red wine vinegar. Pour the mixture over the Honest Earth Hash Brown Shredded Potatoes in the carton. Fill carton to fill line with water from hot water dispenser at 180° - 190°F (80°-90°C). Reclose and let stand at room temperature for 10 minutes.
Place the refreshed shreds into a bowl and fold in the egg, celery, scallions, sweet relish, and mayonnaise.
Finish by adjusting the seasoning with salt and pepper to taste. Finally, add more or less mayonnaise to reach desired profile.
