Veggie Hash
- 1 carton (1.25 pounds) Honest Earth® Hash Brown Shredded Potatoes
- 1¾ quarts hot water
- ¼ quart hot honey
- 1 pound broccoli florets (blanched)
- 1 pound carrots (julienned)
- 1 pound zucchini (julienned)
- 1 pound butternut squash (cubed and blanched)
- salt and pepper (to taste)
- ½ cup vegetable oil
- Measure the water and hot honey. Pour over the Honest Earth® Hash Brown Shredded Potatoes in the carton. Close the carton and allow to refresh overnight in the cooler.
- Heat the vegetable oil on a 375°F griddle. Add the vegetables and heat through.
- Add the hash browns to the vegetable mixture on the grill and sauté until the potatoes are golden. Season with salt and pepper to taste.
