Puerto Rican Papas Rellenos

Ingredients
  • 1 bag (26 ounces) Honest Earth® Creamy Mashed Potatoes with Butter & Sea Salt
  • 1 gallon hot water
  • 2 tablespoons adobo seasoning
  • 2½ pounds picadillo (prepared and held cold for assembly)
Instructions
  1. Add one gallon of hot water into a large bowl, add the adobo seasoning to the water and whisk to combine. Once the adobo has been displaced in the water, add the entire pouch of Honest Earth® Creamy Mashed Potatoes to the water and whisk to combine.
  2. Allow the potatoes to hydrate for at least two minutes.
  3. To assemble, using a 2-ounce scoop for the potatoes and a 1-ounce scoop for the filling, prepare the relleno. Scoop the 2-ounce ball of potato into your hand and make an indentation. Place one ounce of the mixture into the indentation.
  4. Enclose the filling into the potato and deep fry them at 350°F until golden brown. Serve two to an order with salsa or salsa verde as a condiment.
