Puerto Rican Papas Rellenos
- 1 bag (26 ounces) Honest Earth® Creamy Mashed Potatoes with Butter & Sea Salt
- 1 gallon hot water
- 2 tablespoons adobo seasoning
- 2½ pounds picadillo (prepared and held cold for assembly)
- Add one gallon of hot water into a large bowl, add the adobo seasoning to the water and whisk to combine. Once the adobo has been displaced in the water, add the entire pouch of Honest Earth® Creamy Mashed Potatoes to the water and whisk to combine.
- Allow the potatoes to hydrate for at least two minutes.
- To assemble, using a 2-ounce scoop for the potatoes and a 1-ounce scoop for the filling, prepare the relleno. Scoop the 2-ounce ball of potato into your hand and make an indentation. Place one ounce of the mixture into the indentation.
- Enclose the filling into the potato and deep fry them at 350°F until golden brown. Serve two to an order with salsa or salsa verde as a condiment.
