Char Siu with Crispy Onion
- 1 bag (32.85 ounces) Idahoan® RUSTIC Buttery Golden Selects® Mashed Potatoes
- 1 gallon hot water
- 10 pounds Char Siu (Chinese pork tenderloin) (Warmed and held for service)
- 6 pounds sweet onion (Peeled and sliced paper thin, held in water for assembly)
- 1 pound flour
- 2 ounces salt & pepper blend (Add to the flour for breading)
- Place the hot water into a large bowl and whisk in the potatoes, ensuring there is no dry potato visible. Allow to refresh for 10 minutes, hold hot for assembly.
- Toss the onions in the flour seasoning mixture and fry at 375°F until golden brown. Drain and hold for assembly.
- To assemble, place 4-ounces of the Idahoan® RUSTIC Buttery Golden Selects® Mashed Potatoes in the center of the plate. Top with 4-ounces of the sliced Char Siu and garnish and with 1-ounce of the crispy onion.
