Mashed Potato & Salad Bowl

Ingredients
  • 1 pouch (13 ounces) Idahoan® CREAMY Classic Mashed Potatoes
  • 1 gallon hot water (190°F)
  • 2 pounds spring salad mix
  • ¾ pound shredded carrots
  • ¾ pound sliced cucumber
  • ¾ pound garbanzo beans
Instructions
  1. Place 1 gallon of hot water into a bowl. Slowly add the Idahoan® Creamy Classic Mashed Potatoes while whisking, allow the potatoes to fully refresh for 2 minutes, and hold hot for assembly.
  2. To assemble the bowl, place the salad mix (all cold salad ingredients tossed together) to one side of the bowl, placing 4-ounces of the mashed potato opposite the salad.
  3. Serve the salad with the dressing of guest's choice.
