Rustic Thai Curry Bowl
- 1 bag (26 ounces) Honest Earth® Rustic Mashed Potatoes with Butter & Sea Salt
- 2 quarts coconut water (Heated but not boiling)
- 2 quarts hot water
- 1½ gallons coconut milk
- 2¼ cups Thai red curry paste
- 8 pounds Asian vegetable blend (Heated and held for assembly)
- Combine the water and coconut water and heat to 190°F. Place into a bowl and whisk in the Honest Earth Rustic Mashed Potatoes, allow to refresh for 1 minute and fluff with a whisk. Hold hot for assembly.
- In an 8-quart pot, heat the coconut milk and curry paste to a boil. Once boiling, add the vegetables and place on steam table. Hold hot for service.
- To assemble, place 4-ounces of the mashed potatoes into a bowl and top with 5-ounces of the vegetable curry.
