Scallion Chicken Hash Brown Bowl
- 1 carton (1.25 pounds) Honest Earth® Hash Brown Shredded Potatoes with a Hint of Sea Salt & Pepper (Prepared according to hot water refresh)
- 1¾ quarts hot water (190°F)
- ¼ cup vegetable oil
- 3 pounds ground chicken
- 1 ounce ground ginger
- 1 gallon low-sodium chicken broth
- ¼ cup low-sodium soy sauce
- ¼ cup hoisin sauce
- 1 ounce corn starch
- 2 ounces cold water
- 1 cup scallions
- Add the hot water to the carton of Honest Earth Hash Brown Shredded Potatoes as directed. Close and refresh for 10 minutes and drain excess water. Hold hot for assembly.
- Add oil to a 6-quart pot with the chicken and ginger. Once fully cooked, add the chicken stock, soy sauce, and hoisin sauce and bring to a boil. Combine the cold water and corn starch to form a slurry, and whisk into the chicken mixure to tighten the sauce.
- Place the chicken into a pan for the steam table. Add the scallions and stir to combine.
- To assemble, place 4-ounces of the refreshed potatoes into a bowl and top with 4-ounces of the scallion chicken.
