Chicken Tenders with SMARTMASH® Potatoes & Salad
- 1 bag (26 ounces) Idahoan® SMARTMASH® Classic Mashed Potatoes with Vit C (prepared according to hot water instructions)
- 1 gallon hot water (water should be between 180°F to 190°F)
- 10 pounds chicken tenders (prepared and held hot for assembly)
- 7½ pounds spring mix
- 1 quart ranch dressing
- Add 1 gallon of boiling water to a 6? deep ½ size steam table pan. Add entire package of potatoes all at once and stir to wet all potatoes. Let stand one minute. Mix with wire whip.
- Place 4-ounces of potatoes onto plate and place 4-ounces of prepared chicken tenders alongside. Serve with side salad.
