Grilled Chicken & Carrots with Buttery Homestyle® Mashed Potatoes
- 1 bag (32 ounces) Idahoan® CREAMY Buttery Homestyle® Mashed Potatoes (prepared according to hot water instructions)
- 1 gallon hot water (water should be between 180°F to 190°F)
- 10 pounds herb cooked chicken breast (heated and held hot for assembly)
- 7½ pounds baby carrots (seasoned, roasted, and held for assembly)
- Measure 1 gallon of hot, not boiling, water into a large bowl.*
- Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
- Fluff the mashed potatoes and hold for assembly.
- Place ½ cup of Idahoan® Buttery Homestyle® Mashed Potatoes onto the plate at one o'clock, place the chicken at the six o'clock position, and the carrots at the ten o'clock position. Serve.
