Salmon with SMARTMASH® Potatoes & Salad

Ingredients
  • 1 bag (26 ounces) Idahoan® SMARTMASH® Classic Mashed Potatoes with Vit C (prepared according to hot water instructions)
  • 1 gallon hot water (water should be between 180°F to 190°F)
  • 10 pounds salmon fillets (4-ounce prepared filets, held hot for assembly)
  • 7½ pounds iceburg mixed salad
  • 1 quart vinaigrette dressing
Instructions
  1. Add 1 gallon of hot water to a 6? deep ½ size steam table pan. Add entire package of potatoes all at once and stir to wet all potatoes. Let stand one minute. Mix with wire whip.
  2. Place 4-ounces of potatoes onto a plate and place the salmon to the right and a side salad to the left. Serve.
