Seared Scallops with INSTAMASH® Mashed Potatoes

Ingredients
  • 1 bag (28 ounces) Idahoan® FLAKES INSTAMASH® Mashed Potatoes Mix (prepared according to hot water instructions)
  • 1 gallon hot water (water should be between 160°F to 180°F)
  • 3 ounces ghee
  • 10 pounds scallops
  • 8 ounces sweet chili sauce
Instructions
  1. Measure 1 gallon hot water into a 4" x ½ size steam table pan. While pouring in entire pouch of potatoes, gently blend mix with spatula. DO NOT WHIP. Place on steam table and heat to serving temperature.
  2. Place the ghee into a sauté pan and heat. Add the scallops in small batches and sear on both sides. Do not overcook. Finish by gently adding the sweet chili sauce to the scallops and hold for assembly.
  3. Place a 4-ounce serving of the potatoes onto the plate and arrange 4-ounces of scallops on top. Add extra sweet chili sauce if desired. Serve.
