Miso Glazed Salmon
- 1 pouch (20.35 ounces) Idahoan® SLICES Scalloped Potatoes
- 2½ quarts Boiling water
- 2½ cups Red miso
- 2½ cups Sake
- 2½ cups Granulated sugar
- ½ cup Low-sodium soy sauce
- 6½ pounds Salmon filets (cut into 4oz portions)
- 2 pounds Spring mix
- Place the boiling water into a sprayed 2-inch half pan. Whisk in the full pouch of potatoes and seasoning, ensuring all seasoning is incorporated.
- Bake at 400°F in a conventional oven for 30-35 minutes. If using a convection oven, bake at 400°F for 20-25 minutes. Hold for assembly.
- Combine the miso, sake, sugar, and soy mixing until well combined. Place the salmon onto a lined sheet pan and brush with the glaze. Bake at 350°F for 10-15 minutes until an internal tempature of 145°F is achieved.
- To serve, place 2-ounces of spring mix onto the plate. Place the salmon on top of the greens and brush with additional glaze if desired. The scalloped potatoes can be served in a cassolette or on the plate.
