Sweet Chili Shrimp Bites

Ingredients
  • 1 bag (32.9 ounces) Idahoan® SHREDS Tater Tumblers® Original Mix with Spices
  • 1½ quarts Hot water (Water should not be above 130°F)
  • 8 ounces Sweet chili sauce (Add to water for rehydration)
  • 16 ounces Cooked shrimp (Chopped)
  • 2 quarts Cocktail sauce
Instructions
  1. Measure 1-1/2 quarts of hot water (130°F) into a large bowl. Water should not be boiling. Stir in the sweet chili sauce to ensure flavor blends into the entire mixture as the potatoes hydrate.
  2. Add entire pouch of potatoes all at once, using spoon or wire whip to distribute evenly and wet all potatoes. Let stand 10 minutes until the potatoes are fully hydrated.
  3. Once the potatoes are hydrated, add the shrimp and then fold together.
  4. Portion using a #60 scoop. Fry at 350°F for 2-3 minutes or until golden brown. Serve 6 pieces per order with 2 ounces of cocktail sauce in a ramekin.
