Sweet Chili Shrimp Bites
- 1 bag (32.9 ounces) Idahoan® SHREDS Tater Tumblers® Original Mix with Spices
- 1½ quarts Hot water (Water should not be above 130°F)
- 8 ounces Sweet chili sauce (Add to water for rehydration)
- 16 ounces Cooked shrimp (Chopped)
- 2 quarts Cocktail sauce
- Measure 1-1/2 quarts of hot water (130°F) into a large bowl. Water should not be boiling. Stir in the sweet chili sauce to ensure flavor blends into the entire mixture as the potatoes hydrate.
- Add entire pouch of potatoes all at once, using spoon or wire whip to distribute evenly and wet all potatoes. Let stand 10 minutes until the potatoes are fully hydrated.
- Once the potatoes are hydrated, add the shrimp and then fold together.
- Portion using a #60 scoop. Fry at 350°F for 2-3 minutes or until golden brown. Serve 6 pieces per order with 2 ounces of cocktail sauce in a ramekin.
