Cranberry Duchess

Ingredients
  • 1 bag (26 ounces) Honest Earth® Creamy Mashed Potatoes (prepared according to hot water
    instructions)
  • ½ gallon hot water (water should be between 180°F to 190°F)
  • ½ gallon cranberry juice (heated to a minimum 180°F to 190°F)
  • 14 each egg yolks (to subsitute frozen pasteurized egg yolks, use 8 ounces or 250ml)
  • 1 tblsp ground nutmeg
  • 8 ounces butter (melted)
Instructions
  1. Measure 1 gallon of hot, not boiling, water into a large bowl.* Combine with the
    cranberry juice.
  2. Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet
    all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
  3. Once the potatoes are hydrated and slightly cooled, add the eggs and nutmeg, mixing
    well. Allow the mixture to set for 5 minutes to allow for total hydration.
  4. Pipe the potatoes into the desired shape (classic shape is a cone using a large star
    tip)
  5. Drizzle the potatoes with melted butter and place in an oven at 400°F until lightly
    browned.
